For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 4 cups powdered sugar
- 2 Tablespoons whole milk
- 1 ½ teaspoons vanilla extract
- ¼ teaspoon fine sea salt
- ¼ cup rainbow sprinkles (jimmie style recommended)
Instructions
- Preheat the oven to 350°F (175°C). Line cupcake tins with paper liners and set aside.
- Add the flour, sugar, baking powder, and baking soda to the bowl of a stand mixer with the paddle attachment and stir on low speed to combine. You can also use an electric hand mixer and a bowl for this.

- Then add in the egg whites and vanilla extract and stir on medium-low speed until just smooth. If using a stand mixer, make sure to scrape down the sides of the bowl as needed to ensure even mixing.

- Stir in the whole milk and vegetable oil on low speed until combined. Finally, gently fold in the ⅓ cup of rainbow sprinkles with a spatula to prevent bleeding.

- Fill the cupcake liners ⅔ of the way full (about 3 Tablespoons of batter in each). Be careful not to overfill, as this can cause spillage or sinking.

- Bake for 16-18 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean, indicating it’s fully baked.

- Let cool in the pan for 10 minutes to allow them to set. Then, carefully take the cupcakes out and cool them completely on a wire rack before frosting.

- Once the cupcakes are completely cool, proceed to make the frosting.
- Add the softened unsalted butter to the bowl of a stand mixer with the paddle attachment (or use an electric hand mixer in a large bowl) and whip until light, creamy, and smooth, about 2-3 minutes.

- Slowly add the powdered sugar, a little at a time, to the whipped butter on low speed until fully mixed in and smooth. Scrape down the sides of the bowl as needed.

- Then add in the whole milk, vanilla extract, and fine sea salt, and stir on low speed to combine. Scrape down the sides of the bowl as needed to ensure everything is well-mixed.

- Place the mixer on medium-high speed and whip the frosting for 3 minutes until it becomes light, airy, and incredibly fluffy.

- Gently stir in the remaining ¼ cup of rainbow sprinkles by hand with a spatula.

- Frost the cupcakes with the finished frosting. I recommend using a piping bag with a Wilton 2A round tip attached for a professional look. Add more sprinkles on top if desired for extra flair, and serve these delightful Funfetti Cupcakes!
