- Add zest and juice of 2 fresh limes into a mixing bowl that is large enough to hold all the chicken thighs. Note: You could also use a large Ziploc bag too.

- Add 1/4 cup fresh chopped cilantro (if using) to the bowl.

- Then roughly chop 3 cloves fresh garlic and add to the bowl.

- Add 1/2 teaspoon ground cumin, 1/8 teaspoon crushed red pepper (if using), 1/2 teaspoon chili powder, 2 Tablespoons honey, 1 teaspoon kosher salt, 1/2 teaspoon pepper, 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder and 2 Tablespoons olive oil and stir together.

- Add 6 bone-in, skin-on chicken thighs to marinade and stir to ensure chicken is entirely coated.

- Cover bowl with plastic wrap and place in the refrigerator to marinate for 45-60 minutes.

- After chicken has marinated the full time, preheat oven to 425 degrees F. Place large oven-safe skillet on stovetop on medium-high heat. When it is heated, pour in 2-3 Tablespoons olive oil, and allow to heat up for about 1 minute.
